With grilling season in full force, it’s time to break out all of the side dishes that require fresh produce. This salad made with mango, avocado, black beans, and cucumber is a rainbow of colors. It’s simple to make and super light since it’s not smothered in a heavy dressing. Just a squeeze of fresh lime juice, some salt and pepper, and that’s all you need!
MANGO AND BLACK BEAN SALAD
1 can black beans, drained and rinsed
2 mangoes, peeled and diced
1 ripe avocados, diced
½ cucumber, peeled and diced
½ medium red onion, medium diced
Handful cilantro, finely chopped
½ jalapeno, minced
1 lime, juiced
Salt and pepper to taste
- Combine ingredients in a medium sized bowl.
- Mix together all of the ingredients.
