Garlic cheddar bombI love planning parties. And it’s not very hard to guess what my favorite part about party planning is—the food. What’s great about most parties is that it’s not a sit-down, formal affair (unless you want it to be). Most of the time, you do appetizer/small plate type fair—and good small bite options are almost endless.

I was scouring one of my favorite recipe sources (Pinterest) in an effort to find a new appetizer recipe when I came across these little guys. The name alone won me over. And as long as you’re not preparing your biscuits from scratch, they’re really simple to make, too. All you need is store bought biscuits, some cheddar cheese, and the parmesan/garlic mixture for the outside. That’s it!

As long as you seal the biscuit closed, the cheddar should be trapped inside. So when you take that first bite, the cheesy goodness will ooze out. (I promise I won’t judge if you just stand in front of the plate and eat one after another).

GARLIC CHEDDAR BOMBS
Servings: Makes about 20 balls

Ingredients:
1 can of pre-made biscuits (Grands is best)
Cheddar cheese, cut into 20 cubes
3 tablespoons unsalted butter
1 clove garlic, crushed
⅓ cup grated parmesan cheese
2 teaspoons dried parsley

Directions:

  1. Preheat the oven to 375°F.
  2. Cut each biscuit in half and slightly roll out. Place a cheese cube in the middle and wrap the biscuit dough tightly around the cube, ensuring the edges are sealed.
  3. Roll in your hands to make a ball shape.
  4. Place the butter and garlic in a small bowl and melt together in the microwave for about 12 seconds. In a separate bowl, combine the parsley and parmesan cheese.
  5. Dip each rolled biscuit into the butter mixture and then into the cheese mixture. Place on a baking tray that’s been sprayed with cooking spray.
  6. Bake 10-12 minutes or just until browned.
